But at The Cairns Rum Company, clarity is something we achieve naturally through careful distillation and barrel maturation. Our rums present as perfectly clear and bright, yet we choose not to chill filter. Why? Because chill filtering removes more than haze — it removes character.

What Is Chill Filtering?

Chill filtering is a process where a spirit is cooled to sub-zero temperatures (typically around –4 °C to 0 °C) before being passed through an ultra-fine filter. The goal is to remove naturally occurring compounds — mainly esters, fatty acids, and long-chain molecules — that can become temporarily visible as haze or cloudiness when a spirit is chilled or diluted. It’s a cosmetic step designed to guarantee clarity in all storage conditions, even at freezing temperatures. Large-scale producers favour the process for its consistency and visual stability.

The Pros: Why Some Distilleries Chill Filter

There are valid reasons why many commercial distilleries chill filter their spirits:

  • Visual uniformity: Prevents haze when spirits are chilled below zero or served over ice.
  • Stability during shipping: Ideal for cold climates and long-distance export where temperatures fluctuate.
  • Mass-market presentation: Guarantees a consistent look across thousands of bottles.

For large-volume producers, aesthetics and stability take priority. For artisan rum makers like us, flavour and authenticity come first.

The Cons: What’s Lost in the Process

The same compounds that cause chill haze are the ones that give rum its texture, mouthfeel, and aromatic depth. Filtering them out strips a spirit of its natural richness.

  • Reduced flavour: Esters — the compounds responsible for tropical fruit, floral, and spice aromas — are partially removed.
  • Lighter body: Natural oils and acids contribute to the rum’s texture; removing them makes it feel thinner.
  • Muted aroma: Chill filtering can blunt the very complexity that distinguishes handcrafted rum.

In short: chill filtering creates cosmetic perfection at the expense of personality.

Why We Don’t Chill Filter

At The Cairns Rum Company, our rums are already perfectly clear thanks to meticulous fermentation, careful distillation, and natural settling during tropical maturation. We simply don’t need to strip anything away. The spirit that leaves our barrels is clean, balanced, and brilliantly transparent — a result of proper distillation and time in oak, not post-processing.

However, like all natural, unfiltered rums rich in flavour compounds, our spirit may behave differently under extreme cold. If chilled well below zero, some esters and fatty acids can temporarily become visible or subtly shift the flavour balance. Once returned to room temperature, clarity and taste return to normal — proof that those flavour-rich molecules are still there, doing their job.

The Science of Authentic Rum

Dr. Rafael Arroyo’s early rum research highlighted the importance of retaining ‘rum oils’ — the complex, high-boiling aromatic compounds that give body and persistence. These are the very elements most affected by chill filtering. By choosing not to remove them, we preserve the depth and tropical intensity that defines our high-ester and Grand Arôme rums. It’s a deliberate choice that honours both tradition and terroir.
