An early bottling, read like a lab record
88 Bamboo's rum editor sampled our early S.Pombe and S.Japonicus releases and singled out one experimental batch — sugarcane syrup, S.Pombe, our own muck pit, three months in a 50L American oak cask.
The result is a rum that changes my perception of “funk” in rum entirely — overwhelmingly cheesy and savoury, exactly what you'd expect from a cheese and charcuterie platter.
