Australian Innovation: The Fission Yeast Difference

The Cairns Rum Company is reshaping Australian rum by rejecting the "off-the-shelf" industrial standards. While almost every modern distillery uses Saccharomyces cerevisiae for speed and yield, we have eliminated it entirely.

 

Our Point of Difference:

  • Exclusive Fission Yeast: We built our own fermentation system around Schizosaccharomyces pombe (S. pombe)—a rare, hand-cultured yeast that creates deeper, more complex flavour precursors.
  • Microbial Diversity: We support our primary engine with organisms like Japonicus to add secondary layers of aromatic development.
  • Flavor over Speed: This process is slower and technically demanding, but it produces the high-ester, grand-aroma characters that define our style.

We aren't just running a different process; we’re proving a different philosophy of how rum should be made.

Award-Winning Quality: Going Back to Go Forward

Drawing from Dr. Rafael Arroyo’s scientific achievements in the 1930s and 40s, we have gone back to a period in rum’s history when fermentation was driven by a diverse ecosystem of yeasts. By bringing modern control to these heritage methods, the Cairns Rum Company has become Australia’s first true producer of High-ester and Grand Aroma rums.

 

This isn't just a different process; it’s a different philosophy. While others optimize for cost drivers like speed and yield, we optimize for long-term value and distinctive character. The result is not subtle: our rums show greater aromatic intensity, longer persistence on the palate, and a heavier, more structured base.

 

In 2025, four of our rums (under our Line 44 brand) won recognition at the Australian International Rum Awards. We believe we are now part of a select group of only a handful of distilleries worldwide with the deep knowledge needed to produce expressions of this nature.

Tropical Terroir

We don't actually love the word 'terroir'—it's overused these days—however, it does have an application here. Our sugarcane substrates come wholly from the fertile fields surrounding Cairns, so we are firmly rooted in our Tropical Far Northern home.

 

Our repertoire of rums are all made from either Molasses, Syrup, or fresh cane juice, all sourced from our local mill where there is history dating back to the 1880s. Our 10,500 litre double retort pot still brings out the flavours and aromas of our cane, helping us build a new chapter in rum production that reflects Far North Queensland Heritage.
